PMS Joys! :)


Yes, the name is odd...but that's exactly what these are. On a "certain day of the month", I was having an "I need chocolate, and I need it NOW" moment. I had a serious craving for Almond Joy. 

Now, I COULD have gotten on my bike, in my car or on my scooter and popped into the store, paid .50 cents and eaten an Almond Joy,...but NOoooooo. I didn't want to leave home, I wanted to create something yum! So I did.


I call these PMS Joys because they are my version of an Almond Joy and were created at a "special" time of the month. :)
Here's what you're gonna need:


3/4 cup flour
(I wanted these to be extra healthy, so I used my favorite King Arthur Whole White Wheat ~ did you feel the sarcasm?)
1/8 tsp. salt
2 1/2 cups sweet flaked coconut
1 1/2 tsp. Pure Vanilla Extract
1 (14 oz) can fat-free sweetened condensed milk
Whole Almonds
Semi-Sweet Chocolate Chips

Heat oven to 250.

Mix flour, salt and coconut in a bowl, toss well. Add condensed milk and vanilla; mix well. It will be thick and gooey.

Take a good sized glob of the goop and press one or two Almonds into it.



Place these balls 2 in. apart on a baking sheet LINED WITH PARCHMENT PAPER (unless you don't want to get them off the pan).


Bake 50 minutes (yes, you heard that right), or until golden brown. Cool on racks.

Melt chocolate chips in microwave or over double boiler. Using a slotted spoon (or your fingers), dip the macaroons in the chocolate to coat, and let them dry on a cooling rack.





These are sooooo good, and bad all at the same time! :) They store well in the freezer (I recommend you do this so that you won't be tempted to eat them all at once) - just bring to room temp before munching on these bad boys!


Go on girls, grab some coconut and get baking!

This recipe makes plenty so you'll wanna share with a friend,...I did...

I will most definately be trying these little guys .... even if I don't have PMS anymore. Let's see, they could be Hot Flashies (which is how quickly they'd get eaten!).

Oh yummmmmmm!!! I love coconut too! Of course, if I had them in the freezer, it wouldn't slow me down much. I'd have to give them away! :)
