This is an easier (time-saving) version of my sisters Chicken Tortilla Soup recipe...
Try using pre-chopped packaged veggies from your produce section to save time.
Ingredients:
1 Pkg. pre-cooked, chopped chicken breasts
1/2 cup chopped sweet yellow onion
1 tsp. bottled minced garlic
2 cups chopped carrot
1 cup chopped celery
1 small can chopped green chilis
1 1/2 cups chicken or veggie broth
cayenne pepper (to taste)
Chili powder (to taste)
Salt and pepper
Dash turmeric
Topping:
Chopped Avocado
Shredded Cheese
Broken Tortilla Chips
Heat some olive oil in a soup pot over med-high heat; Add chicken, salt and pepper. Brown on all sides, stirring constantly. Add onion, garlic and turmeric, and cook until chicken is no longer pink inside. Toss in remaining ingredients and add enough water to make a happy amount of soup. :) Careful with your spices if you don't want your lips to burn!
Bring to a boil, cover and reduce heat to a simmer. Cook until carrots are just tender. Top with toppings, and enjoy with Jalapeno Cheddar Cornbread!
