Oatmeal Chocolate Chip Cookies

These are truly the BEST cookies, my hubby loves them, my best friend loves them, who could ask for more, lol. MMMMMMmmmmmmmm

Oatmeal Chocolate Chip Cookies

1/2 cup sucanet (or regular white sugar)
1/2 cup packed brown sugar
1/2 cup butter softened
1 tsp vanilla
1 large egg
1 cup 100% Whole White Wheat flour (King Arthur) (or all purpose flour)
1 cup oats
1/2 tsp baking powder
1/8 tsp baking soda
1/8 tsp salt
1/2-3/4 cup chocolate chips
nuts as desired

Preheat oven to 350. Beat butter and sugars until fluffy, add egg and vanilla, beat well. In a separate bowl, mix all dry ingredients. Add to butter mixture, beating at low speed just until mixed in. Stir in chips and nuts. Bake 15-17 minutes or until just golden around base edges. Cool on pans 3 minutes, remove to racks and cool.

This is my variation of a recipe that I have tweaked a few times. I have considered, but not tried to make a few more changes, such as using sucanet and honey, using cocounut oil for part of the butter, etc... They come out so perfect in taste and texture like this that I haven't wanted to change it, since I don't make them often enough for them to be BAD, lol.

Oh, one time I had PB chips and I added those with the choc chips and it was REALLY good. Perhaps a blob of PB would be good in there in place of some of the butter.
