Chocolate Drop Quickies

These are a perfect Chocolate and Sugar quick-fix, LOL. My friend Kim and I use to make these a LOT, but we haven't made them together in a while, as we are trying to "cut back" on the massive sugar intake, LOL. However, if you are just CRAVING something quick, chocolate and easy, these hit the spot.
Leftovers can be frozen and taken out to thaw (or warmed slightly in the micro).

Chocolate Drop Quickies

2 cups Sugar
1/2 cup Butter
1/2 cup Cocoa
1/2 Cup Milk
3 Cups Oats
1 tsp. Vanilla
1/2 cup Chopped Nuts (optional)
1/2 cup shredded sweetened coconut (optional)

In a medium saucepan, whisk together sugar and cocoa, whisk in milk, add butter. Heat to a boil quickly, then reduce heat to medium. Cook 3-4 minutes or until soft ball stage (234 degrees). Remove from heat and stir in oats and vanilla. Stir in optional ingredients if desired. Drop heaping Tbsps. onto wax paper and let cool.

Variation: I like to substititue 1/2 the sugar with Sucanet, or you could try molasses for a unique flavor. Try adding a little cinnamon. Try different types of nuts.


Now, go make a dental appointment and enjoy these sugar laden bad-boys! :)

:D i love these. i replace the oats with shredded coconut, and it is decadent beyond belief. so, so, so good.

Thanks for linking this! Yum! I've never had these with nuts or coconut - sounds good. My version has peanut butter, so I justify eating them because they have protein (p. butter & milk) and fiber (oats) and antioxidants (cocoa) - LOL!
