Goat Cheese Burgers with Golden Onions

I love a good home grilled burger with all the "original" fixin's. However, sometimes I crave something just a little different, this was created on one of those nights...

Roast a couple of heads of garlic while you bake a chicken or casserole, then keep refrigerated for a week or so. Roasted garlic is excellent spread on Italian bread, mashed into guacamole, stirred into pasta sauce, etc...

Burgers:

1 lb lean beef

1/3 cup Roasted-Garlic
1 Tbsp fresh basil, minced (or 1 tsp dried)
1 tsp Extra Virgin Olive Oil
Fresh ground pepper
Kosher Salt

Topping:

1 Med. Sweet Yellow Onion (Vidalias are the best) OR 2-3 good sized Shallots (or a mix of both)
1 Tbsp Butter (the real stuff)
2 tsp Extra Virigin Olive Oil
Salt and pepper

You will also need:

Burger Buns
Goat Cheese (cut into 1/4 inch thick slices)

For burgers, mix all ingredents together gently, pat GENTLY into patties and grill as usual for burgers.

NOTE: Overworking the meat and mashing your patties down with make the meat tough, be gentle.


While meat is grilling: Heat butter and oil over Med. heat. Add onions and saute until golden and soft. Adjust heat as needed, decreasing so that onions don't brown or burn - you want them to slowly carmelize and turn a gentle golden color. Season with Kosher Salt and Fresh Ground Pepper.


Lightly toast buns, top with a patty, slice of goat cheese and large dollop of onion topping!




Fire up the Grill and go milk the Goat!
