I love this recipe, it came from Cooking Light magazine and is one of my favorite crusts...I've added my modifications in parenthesis. This will make 1 crust.
2 Tbsp. butter - softened
1 Tbsp. (1/3 less fat) Cream Cheese - softened
2 Tbsp. sugar
1 tsp. vanilla
1 Tbsp. milk (or 1/2 n' 1/2)
1 lare egg yolk
1 cup flour (1/2 of it with white wheat)
1/2 tsp. baking powder
1/4 tsp. salt
Combine first 4 ingredietns in a bowl; beat well at medium speed of mixer until smooth. Add milk and egg yolk; beat well. Add flour, baking powder and salt to bowl, stir until well blended. Shape into a disk and roll out between two sheets of parchment paper. Turn into buttered pie plate.
NOTE: If it's too moist to roll out, chill for a few minutes.
