Applesauce Snack Cake

This is an "updated" version of my Mom's famous Applesauce Snack Cake, she would make this for us as kids. I've taken the original version and "tweaked" it to make it much healthier without losing any of the flavor or moist tenderness - my Mom would even prefer this version, lol. However, if you'd like to make her original version (2 cups of sugar and all white flour) you can get the recipe at the bottom of this post.

1/4 cup butter (at room temp)
1 cup Honey
2 eggs
2 1/2 cups (King Arthur) Whole White Wheat flour
1 1/2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1 3/4 cups applesauce (divided)
3/4 cup raisins
3/4 cups chopped walnuts


Preheat oven to 350. Butter and flour a 9x13 pan pan. Cream the butter and 1/4 cup applesauce, add honey. Add eggs, beating well after each addition. In a separate bowl, whisk together flour, soda, salt and spices. Add dry ingredients and applesauce alternately to creamed mixture. Stir in raisins and nuts and spread in pan. Bake 35-40 minutes (test with toothpick).




This is really good warm, but equally as moist and delicious at room temp.


Original ingredient changes:



MINE - MOM'S
1 cup honey = 2 cups sugar
1/4 cup butter = 1/2 cup butter
1 3/4 cup applesauce = 1 1/2 cup applesauce
whole wheat flour = white flour
3/4 cup raisins = 1/2 cup raisins
3/4 cup walnuts = 1/2 cup pecans
Bake 35-40 min = bake 45 mins
Whip out that Wooden Spoon and get Mixin'! :)
