Cristofre's Peanut Butter Cookies
I named these cookies after my son because they are his all time favorite cookie! :) They taste sooooo good and have the benefit of whole wheat flour and oatmeal...enjoy!
Ingredients:
1/3 cup honey
1/2 cup packed brown sugar OR Sucanet
1/2 cup organic unsalted sweet cream butter (softened to room temp.)
1/2 cup organic/natural peanut butter (brought to room temp.)
1 egg
1 1/4 cup King Arthur White Whole Wheat*
3/4 tsp baking soda
3/4 tsp baking powder
1/4 tsp salt
3/4 C. Oats
In a mixer, beat first 5 ingredients (honey thru egg), on med speed until light and fluffy. In a separate bowl, whisk together remaining ingredients (flour thru oats). Add dry ingredients to butter mixture, beating on low speed only until incorporated. Scrape down bowl, cover with plastic and chill for about 1 hour.
Preheat oven to 375. Cover a baking sheet in parchment paper.
Make 1 inch balls of dough and place on baking sheet 2 inches apart. Dip fork in flour and tap away excess. Press into balls criss-cross fashion. Bake for 9-10 minutes, or until just lightly brown around the edges. Cool on pan 2 minutes, then remove to rack and cool completely.
These are sooooo yummy! :)

I've just discovered King Arthur's flour. In our part of the country it's a bit more expensive than other brands, but definitely high quality in terms of baking. The recipe sounds deelish!
