This was truly the best photo I could get of this dish. It's one of those dishes that tastes fantastic, but just doesn't look like much more than a glob of goo, LOL.
I created this when I had a "bumper crop" of broccoli in my garden (I've always wanted to use that term...woo-hoo!). Other than all that yummy cheese, it's a pretty healthy dish using brown rice and NO canned soup gunk.
This is a one pan meal, but you must use a pan that can go from stovetop to oven. If you don't have one, plan to transfer everthing to a very large baking dish after the stovetop portion.
In a nutshell you will need:

Olive Oil
Salt n' Peppa
boneless skinless chicken breasts
onion
garlic
red bell pepper
chicken broth
milk
cream cheese
shredded sharp cheddar
brown Rice
broccoli florets
Roasted Garlic crackers or triscuits
parmesan cheese
butter

Thanks for the great recipe! I made it on the weekend and it turned out really well. I made a few minor changes with ingredients but it was really, really tasty! :)
I have to admit I hadn't read the full recipe ahead of time so didn't realise the cooking time was so long. I ended up refrigerating it and serving the next night but it kept well and was delicious. Thanks!
