I adapted this from a basic Oatmeal raisin muffin recipe that I found online...I tweaked this so far that it's more like a major transformation than an adaptation, LOL...here ya' go...
These are super healthy and VERY tasty!
1 cup Rolled Oats
1/2 C. 2% Milk
1/2 C. Greek Plain Yogurt
1 egg
1/4 C. Blackstrap Molasses
2 Tbsp. packed Brown Sugar
1/4 C. Applesauce
1/4 C. Extra Virgin Coconut Oil (or melted butter if you don't have this)
1 C. White Whole Wheat Flour (King Arthur) - I do not suggest using regular hard wheat flour, if you can't find the white wheat, use wheat pastry flour.
1 Tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
3/4 C. Dried Berries (I use Cherry Berries, which is a mix of Cherries, Blueberries and Cranberries)
Preheat oven to 400.
In a medium bowl, combine oats, milk, and yogurt. Let sit while you mix the dry ingredients.
In a medium bowl, mix flour, baking powder, soda, and salt.
To the oat mixture, add egg, brown sugar, molasses, applesauce and coconut oil (or butter), stir until well combined. Add this mixture to the dry ingredients and stir just until moist and gently combined. Fold in berries.
Place paper muffin cups in a 12 cup pan. Fill cups evenly and bake for 12-15 minutes or until toothpick tests clean. Cool 2 minutes in pan, then remove to cooling rack.
They are yummy with or without butter!
