Broiled Tilapia with Thai Coconut-Curry Sauce



I got this recipe straight out of Cooking Light, which is one of my favorite recipe resources...as a matter of fact, I just got my new magazine yesterday and I've got several recipes circled to make this month, including coconut cake! Oh, I can't wait...




Anyhooo...I made this recipe.
..I did 2 things different:


**I served this with Brown Jasmine rice (because white rice is useless health-wise) :).

**I left out the Red Curry Paste. I didn't have any, and I know it's spicy, and hubby doesn't like much spice, so it was fine for me to leave it out. The recipe was REALLY yummy anyhow, as I had no idea what I was missin'....

Oh, Yum! My husband is allergic to all seafood but tuna, so I am just going to sit here and drool for a bit. Just like I did over your peanut butter cookies, to which my daughter is also allergic. Maybe my sister will let me borrow her kitchen for an afternoon. Hmm...
